Orzo With Vegetbales

Serves 2

1 lb-Orzo
1/2 cup-Zucchini diced
½ cup-Tomato diced or cherry tomatoes
1/2 cup-Variety of bell peppers diced
1tsp -Garlic crushed
1 large-Onion chopped
1 tsp -Red wine vinegar
½ tsp-Turmeric Powder (optional)
1 or 2 tsp-Lime juice
1 tsp-Black pepper
A few-Rosemary basil or oregano
A few-Parsley or cilantro chopped
1 tbsp-Oil or butter
To taste-Salt


1. Cook orzo in boiling water according to the package instructions. When its done, drain it in a strainer or sieve and set it aside.

1.Heat the butter in a large skillet. Add onion and garlic. Sauté for 3 minutes.
Then add vegetables and tomatoes. Stir well. Add red wine vinegar, black pepper, salt, rosemary, turmeric and lime juice. Let the vegetables cook in this gravy.
2. Add orzo into this vegetable gravy and mix it well. Season with parsley or cilantro.


You can also add chicken or shrimp to make a different variation.
